Summer Creamsicle

Welcome to Tuesday Boozeday!  A new post every Tuesday in celebration of making it past the dreaded first day of the week.  Whether it’s back to work, back to school or back to the daily grind of life after a (too short) weekend; kick back and relax with today’s cocktail and prepare to own the rest of the week.

Today’s drink:  Summer Creamsicle

Here’s a secret, I’m not a supporter of summertime.  I hate being hot, and the sun hates me right back.  The kids are out of school and my house falls completely out-of-order.  There’s no more routine, no more schedule, but my weekends are jam-packed with shit we have to do or go to until September.  Nope.  No thank you.  Even on our most coordinated day during the year we are still a mess and I most likely dropped the kids off for school 3 minutes late, so summer is NOT this mom’s ally.  Something I can get behind:  Cold, blended summer cocktails.  They are those drinks worth stepping out of the shade to get your hands on.

When you add a little ice cream, refreshing orange juice and “adult nectar” to your glass you get the confidence needed to calm the chaos of summer.

So until sweater weather creeps back out I’ll be relaxing in my chair with one of these.  I’ll be trying to regain my composure and schedule our family chaos back into its rightful place.  Try one and leave me a comment below!  I want to know how everyone else copes….or if you changed the drink up and made it your own.  Share if you did!

Summer Creamsicle

Blended summer drink to beat the heat!

Servings 1 Drink

Ingredients

  • 3 Scoops Vanilla Ice Cream
  • 1.5 oz. Mandarin or Orange Vodka
  • 3 oz. Orange Juice
  • Handful of Ice
  • Whipped Cream Topping

Instructions

Tip: I blended one drink using the individual cup on my Ninja blender!

  1. Place handful of ice and ice cream in blender cup.

  2. Pour shot of Mandarin or Orange vodka and orange juice over top.

  3. Blend until completely smooth and pour into serving glass.

  4. Top with whipped cream and ENJOY!
